A Cake That’s Full of Beans (Literally!)

Love coffee and cake? This is your dream combo! A buttery sponge meets the bold, rich flavour of Urban Brew’s Intensity 14, perfectly balancing sweetness with a caffeine kick. Top it with coffee-infused icing, a swirl of jam, or a sprinkle of walnuts, and you’ve got a show-stopper. Need extra buzz? Use two pods and let the flavour party begin! 👇

Ingredients:

For the Cake:

  • 170g butter or margarine, plus extra for the tins
  • 170g caster sugar
  • 3 large eggs
  • 170g self-raising flour
  • 1 Urban Brew Intensity 14 pod, brewed and cooled (or 2 if you’re feeling bold)

For the Icing:

  • 225g icing sugar
  • 100g butter or margarine
  • 1 x Urban Brew Intensity 14 pod (or 2 for extra flavour), dissolved in 1 tbsp hot water
  • Strawberry jam (optional)
  • Walnuts or cherries to decorate (optional)

Method:

  1. Prep the Scene: Preheat oven to 180°C/160°C fan, and butter two 18cm sandwich tins.
  2. Whisk Away: Whisk butter and sugar until pale and fluffy. Gradually add whisked eggs with a little flour, then fold in the rest of the flour.
  3. Add the Coffee Love: Stir in dissolved coffee, divide batter between tins, and bake for 25-30 minutes until golden. Cool on a wire rack.
  4. Create Icing Magic: Beat icing sugar and butter until creamy, then mix in Intensity 14 coffee. Set aside until ready to assemble.
  5. Sandwich & Style: Spread icing on one sponge and jam on the other (if using). Sandwich together, slather icing on top, and decorate with walnuts or cherries.
